Curried Sausage Casserole

Ingredients

500g (1 lb) sausages

1 carrot, diced

1 onion, diced

1 apple diced

1 banana, diced

1 tomato, diced

1 stick celery, diced

1 tablespoon curry

1 tablespoon flour

1 cup stock

2 teaspoons coconut

1 teaspoon brown sugar

Method

Prick sausages and brown on all sides in a little or margarine. Place in casserole dish.

Saute carrot, onion, apple, banana, tomato and celery until tender. Blend curry powder, flour, stock, coconut, and brown sugar together. Add to vegetables and fruit. Stir until thickened and cook 1 minute. Add salt and pepper to taste. Sprinkle over handful of sultanas and pour over sausages in casserole dish. Cover and cook in moderate oven (180 °C), for 45 minutes.
