Sausages cooked with country ingredients.
Ingredients
1 clove garlic, chopped or crushed
1 green pepper, deseeded and sliced
2 onions, sliced
2 sticks celery, sliced
2 medium potatoes, peeled and cut into 1/4 inch slices
15 oz can (425g) can tomatoes
1 tablespoon English mustard
1/2 teaspoon sugar
salt and pepper
1 lb pork sausages
Method
Combine all the vegetables. Reserve 2 tablespoons of the liquid from the tomatoes, then add the tomatoes and rest of the juice to the vegetables. Blend reserved juice with mustard and add to the vegetables with sugar, salt and pepper. Turn mixture into a buttered casserole dish. Arrange sausages on top and bake in a moderate oven (3500 F, 1800 C) for 1 - 1 1/2 hours until vegetables are tender and the sausage brown. Serves 4
